How to edit Exchange atributes for O365 users that are synced to the cloud with Azure AD Connect

in this scenario O365 objects are read only, how do I add for example email alias on prem AD?

The supported way is via Exchange on-prem tools. If you dont have Exchange on-prem server, you can install and use the Hybrid edition for free: http://support.microsoft.com/en-us/kb/2939261

The not-so-supported, via ADSIEdit/attribute editor. Extending the schema with the Exchange attributes is one thing to consider as well.
