The Message Tracking service is your friend. At the shell, you would be looking to use the Get-MessageTrackingLog cmdlet to interrogate the logs.

Remember the logs are only kept for a limited period of time, and are only created when the function is enabled -- they cannot be retrospectively created if the feature was previously disabled (but it should be enabled by default).
