You have a problem. Neither MacMail not Outlook 2011 will connect to Exchange Server 2003. They require at least Exchange Server 2007 SP2.

The only mail client that will connect a Mac to Server 2003 is MS Entourage which came as part of MS Office 2004 or MS Office 2008.

Unless you can lay your hands on a copy of Entourage, you are only going to be able to connect using webmail until you update your server. Perhaps you can find a copy of Entourage 2008 on eBay.
