Digitally sign internal emails using PKI

Hello,

Can we use our internal Windows PKI to digitally sign internal emails sent via Outlook 2013 (Office 365)? what is involved and is there a document describing the necessary steps?

Sure.
1) issue a webserver style certificate for the user doing the signing; exchange can automatically handle that for you; see this for an example
2) note that the compose window now has sign and encrypt buttons - hit sign :D

This seems to be the right direction. I can see "Exchange Signature Only" and "User Signature Only". Should I  use one of these templates instead of the webserver one? Will the Exchange one work for our hosted Office 365 Exchange?

MS CA Template you want is probably called "User" - assuming you want the full functionality. Signature only keys, as the name implies, can only be used to sign messages; full user certs can also be used for email encryption.
