migrating from a POP to Office 365 Exchange Online

We have a POP account with a service provider and we want to migrate everyones email to the Exchange server.  The best way I can think of doing this is to connect everyone's Outlook client to the POP server and download all the email to each computer.  Then after it is on the computer, connect to the Exchange account.  My question is, will the emails then upload to the Exchange server automatically? Contacts? Mail?

Also, when would be a good time to repoint the MX record for our domain name to the Exchange Server?  Does this all have to done in one day, or can I have the POP and Exchange running at the same time while I do this migration over a week?

Since the current provider is using pop and not imap all of the data resides on your employees computers
you can use the pst capture tool to upload the pst's to the employees exchange mailbox

or use the User PST Importer Tool  if you set messageops as your partner of record it is free
You have to complete it on one day.
The best way is to point the MX record to office 365 so that the new email should reach to office 365.
Then download all the email from pop.
Configure the outlook for office 365.
Import the email to office 365.

How would I download all the email from pop? What did I have to connect my outlook to pop and download it in that manner?

You could add a POP3 mail account as connected account in Office 365. This lets you send, receive, and read mail from all the accounts in Outlook Web App. For more about connected account, please refer to the below links :

Alternatively, If your POP3 account supports IMAP, you would be able to run IMAP migration to migrate from your current POP mail server to Office 365.
