New Rack setup advice

I will be setting up a new rack consisting of Dual Nexus 9372's and Dual Dell N3024P Switches.
The Dell will be for the firewalls, internet router, and other gig based connections. Nexus will be for my San and Cisco Servers connected via twinax cables. probably a "Looped triangle" type of configuration
Should I go with mst or rpvstp across the board, does it even matter really?
Any gotchas I should be aware of with this configuration?
Does Dell support EIGRP now? I run both EIGRP and OSPF on my network

You just need best of STP that your switches talk.
Do you intend to use (rudimentary) routing function in any of switches?

Yes, Plan on have 3 VLANS on this rack. Not sure if I should use the Nexus for the "router on a stick" or use the Dell

With a pair of Nexus switches, why don't you look at a FEX, instead of introducing a second set of switches?  The fabric speed should be 40Gbps in both directions, and they show up in the same config.  So, two logins instead of four.

You can run the Nexus as collapsed core/distribution layers.  Not sure about the 9000 series, but for 5K the Layer 3 is an additional license.
