cutover migration in office 365

can some please tell me what is cutover migration and what basically we do in this migration and how it is basically different from other migration terminologies.

In cutover migration we migrate mailboxes from on-premises to office 365. Once the migration is completed we route all the mail traffic to office 365 and start using office 365 mailboxes.

what is the process of routing traffic over here.
You have to point the MX and other DNS records to office 365 which you can get once you login to office 365

This can be performed by you. This changes has to be done on public DNS.
