A hybrid deployment allows you to integrate your onsite Exchange deployment with your 365 hosted Exchange environment, making them behave like a single Exchange organisation whilst allowing you to have mailboxes on both platforms. It's often used as a stopgap whilst migrating from onsite exchange to 365 but can also be used permanently if required.
