User profile disks with redirected folders

On a Server 2012 R2 VM, I have My Documents redirected via group policy for domain-joined desktops. I also have user profile disks set up on the server.

When the user logs into the RDP server, recent files in the My Documents folder on his local machine that he created do not show up on the server.

Does Folder Redirection work with User Profile Disks? How can I get them to work together?

They work fine together without any special changes. It sounds like you are hitting an unrelated issue. At first blush, I'd guess misconfigured offline folder caching.

Really good idea, except everything I'm seeing with offline folder caching seems only to apply to Windows XP and prior, not Windows 7 in a Server 2012 domain.

As silly as this question sounds, I cannot find one: is there a TechNet or some other article that shows us how to enable offline folder caching on a Windows 7 machine that connects to a Server 2012 R2 box?

Offline caching has basically been the same since 2000. Older articles still apply.

It actually turned out to be a few filenames that were > 256 characters in length when attempting to be redirected.
