Select fields for apache access log serveres

How to setup Apache server to log some fields in a log file and copy the file to
anoter linux log server perdically ?

Can you give me more detail as I'm new to Linux server.

To set up custom log files and formats in Apache, use the mod_log_config module.  These are part of your server config, which means going in the site's VirtualHost container or main server config, not .htaccess files.  That also means restarting the Apache service every time you change it.

Copying the files would be outside of Apache, using the server's logrotate facilities, or cron-based jobs, depending on how you actually want to implement it.

Take a look over that material and try your hand at some basic configuration.  If you get lost, come back with more specific questions and we'll guide you through it.
