Do you have any suggestions to the below before I do ?

I am thinking about switching my below Dell PowerEdge
Windows 2012 server RAID configuration for better
RECOVER if something happens.
=======================================================

CURRENT Setup  4 drives
  ** 3 600GB drives as RAID5  for everything  1.08 TB usable

  ** 1 600GB drive as hotSpare  for everything

=======================================================

DESIRED Setup  7 drives
  ** 2 600GB drives as RAID1  for OS  600 GB usable

  ** 4 600GB drives as RAID10  for all non-OS  1.2 TB usable

  ** 1 600GB drive as GLOBAL hotSpare  for everything

looks ok to me
you could also to 6 drives in a raid 10 to maximize space (about 1.8tb usable)
the OS isn't that huge so using 600gb drives just for that would waste a lot of space

I agree with Seth.

Create x1 RAID10 array with 6 of the disk and one hotspare.

Partition the array (maybe create a smaller OS partition) this way you can leverage the extra performance from the RAID10 for the OS and the extra space for the non-OS

200GB OS
1.6Tb non-OS
