Is there a way to run a report that shows which users have created folders in SP library?

You could easily create a view on a given library showing all folders with their created by column.

If the folders might no longer exist you probably want to ensure Audit is turned on so you can look for items that have been created, and filter for folders.

Won't this affect what the users see?

I basically just want to pull up a quick list that shows who created what folder and where that folder is.

The views can be private to you.

Audit reports would also only be you.

ok, sounds simple enough...
One snag though, this particular Library has well over 3000 items.

And to avoid screwing things up, do I just go to the Library, click library at the top then create a view?

3000 items is fine. Yes, create a view.

Set it as private

Filter by content type 'Folder'

Ensure the Created By column is included
