SBS 2008 Migration to Server 2012 R2 Essentials - what is actually migrated?

I have just migrated the emails on an SBS 2008 server to Exchange Online.

There is now talk of upgrading the server to Windows Server 2012 R2 Essentials. I have therefore been reading up on migrating as it is something I have not done before. I am pretty happy and confident with what i have read but I can't find the answers to a few, maybe stupid, questions that I need to clarify:

1.  When you set the new server up as a replica Domain Controller and transfer the Operations Master Roles, what actually gets migrated? Specifically, Is it all the User Accounts and their personal data - Documents, Pictures etc? Will I therefore only have to move other shared folders such as a Company Folder and install relevant programs  - i.e Sage?

2. While this migration is ongoing, can the users continue to work as normal? Or is it better to do this out-of-hours? It is just that I am not based on-site and some users have a lot of data. If user data is moved as mentioned in point 1, then I would prefer just to leave it running through work day(s) and, once all migrated, complete the rest of the set up over a weekend.

Many thanks for your answer Cliff.

Users will still have access to their data after the migration on the old server, I assume?

I can then move the data across at the weekend when no one is working (as mentioned in step 4 of the Migration Document I referenced) and complete and demote the old server before the start of the working week?

Or am I best doing it all on a weekend? We are talking around 15 users so any rough idea on how long the Migration of Active Directory may take?

On the note of moving user data, can I use Robocopy to move the folders as I know, by default, only the user has permission to the folder storing their data ( They are currently using Redirected folders ) or will I have to give the Server Administrator ownership to each folder?

AD migration on a small scale takes minutes. Not hours. And any SBS install classifies as small. Robocopy usually works with the right flags, but backup/restore can access files that robocopy can't, so that is also an option.

Backup on the SBS server is done by the built-in backup. Would I be able to access that and restore from the backup onto the new server.?

Or would I be better off using a third party backup program?
Built in backup would be fine. But robocopy will likely work. The backup mode flag can resolve most access issues.
