Missing Document Folder from computer removed off domain

Here is the problem.

-Windows 2003 SBS Domain
-Domain server (the sbs server, 2003 edition) crashed three months ago.
-Domain controller crashed several months ago for client site we took over. We do not have access to old IT vendor so can't go down that road.
-Have a Windows 7 and a Windows 8 computer that the admin removed off the domain (the domain that the sbs server crashed on) to set up local profile and copy old domain .local profile over to new profile.  
-The documents folder is missing on those two computers. The end users said they could access their documents folder that is now missing and we cannot recover nor find anywhere.
-I looked at a couple other computers that are logging in with the old domain account to see if there documents or home folders were being redirected, no luck.
- There are no other backup Domain controllers being its a SBS domain so I cannot promote and add back to the domain with the old .local account.
-Just the user's documents folder is missing. nothing else.

We are stuck and urgently looking at new fresh ideas.

Is it possible to use Recuva or getbackdata or like tools to lift documents off the server disks?
http://www.easeus.com/ad/data-recovery-wizard.htm?gclid=COP7o6Sz0cYCFQqSaQod1K0Omg for getbackdata and it might work.

If no, then you may need to get a Recovery outfit to get the data back.

I was thinking about that. I'm really wondering what happened to their documents though.  If the domain controller has been out of the picture for three months, where the heck where they saving their documents currently that they say they are missing.

It sounds like they were running redirected folders in offline mode (Offline files).  This is probably why you could access when you were on the domain but can't now.

Try checking the C:\windows\csc folder to see if you can see any documents in there.

If not, as John suggests Recuva is a good tool to use.

This indeed was the case. We also had to reset the permissions on each folder level and take over ownership of each child folder one by one.
