Azure Active Directory Synchronization Services (AAD Sync)

We have DirSync installed on a server and working with Office 365.

I want to install AAD Sync on another server, and remove the DirSync from the other server.
Does anyone know how to do this, and can it be done in parallel, are there any issues, and can this be done?

You can do it in parallel, no issues there. Just install it on the other server without forcing a sync and remove the old one when ready. You will not have any issues if you skip few sync cycles as well.

Do I have to do anything special with AD Connectors, FIM, etc... ?  Or Does AAD Sync take care of all that?

Unless you have made some customizations of the default configuration, no. Otherwise you can export the settings/reimport them.
