Best Intel CPU for Video editing

Hello,
Looking to build a video editing system for my daughter and am trying to decide on the CPU first.

She will be running CS6 Production Premium, MS Office (Word, Excel, PowerPoint) Matlab and a few other smaller programs. Windows 7 64bit Pro OS.

I’ll use an SSD drive for the OS and Caviar HDDs for the other programs, editing and storage.

I’m looking at Intel Core i7 5930K Haswell-E 6 core and am wondering if waiting for the Intel Core i7-6700K Skylake-S Quad core would be a better idea.  I am also wondering about the 6 cores vs the 4 cores (as more cores are better for vid editing) I also looked at the 5960K with its 8 cores but at $1000.00, the price is 1/3 of her max budget.  

She is not a professional yet (1.5 more years of school) but makes quite a bit of video and has saved up the money for a nice system that will carry her through graduation and a bit beyond.

Thanks both of you,

I'll be using 32gb of RAM to start with a MOBO that supports up to 64gb.  
I think I will go with the i7 5930K  for the 6 cores.
