Exchange 2010 some users signatures are missing all or parts of the signature.

I'm running Exchange 2010 and we are using GPO and a script to add signatures to emails.  The vast majority of users have no problem at all but I have a few that are missing all or part of their signature.  For example someone maybe missing a title while another may be missing a phone number.  There are a couple of others that are showing old data after AD has been updated.  These are happening across various versions of outlook from 2007 to 2013.  I can't find a pattern to help explain the problem.

Thanks Simon,

I'm not sure why it was done this way. I've just taken over as IT Operations Manager at this company less than a month ago.  There are a lot of questionable practices going on here that I'm going to have to clean up.   I'll look into the transport rules. That's the only way I've ever done signatures in the past but my Exchange Admin skills are a little rusty.  Time to brush up a little.
