Ive been looking at a way of securing a web server and several clients. The Clients range from mobile phones to desktops which I want to all connect to a server. Currently I dont have a static IP address at any site (but hopefully will soon), before I start messing around with different types of VPN servers (windows or linux or hardware based). I used to use a service called Hamachi which does what I want, but now isnt free anymore, and doesnt work on mobile phones.

 Im wondering if anyone has any suggestions or recommendations of ways of doing this.

SInce you needed a front protector for website, minimally you should consider web appl firewall, access control via user identity and secure connection via VPN or SSL VPN. Suggest you consider application delivery controller or equivalent for this such as F5 Networks (ASM/APM modules on top of their ADC) or Citrix Netscalar. They comes with VM or appliance too and client device can still be control based on type and login credential. The login info can also be checked with internal AD or RADIUS as req. For the secure connection, SSL VPN is also available that can be certificate.

For Hamachi alternatives, maybe OpenVPN or NetOverNet. For the latter, it has also the comparison with Hamachi summarized
