What are the best recommendations for Windows auditing?

I am deploying a logging solution for our infrastructure. As per y'all experiences, what are the best recommendations for Windows auditing, like what should I audit because I don't want to audit everything.

I am very new to Windows auditing so please excuse my stupid questions.

I wear a lot of hats...

"The solutions and answers provided on Experts Exchange have been extremely helpful to me over the last few years. I wear a lot of hats - Developer, Database Administrator, Help Desk, etc., so I know a lot of things but not a lot about one thing. Experts Exchange gives me answers from people who do know a lot about one thing, in a easy to use platform." -Todd S.

So, how should I configure my subscriber and publisher design? Should I use GPOs to forward the logs to publisher/collector or collector should pull from source computers, which one is better solution?
