On most ASUS motherboards, you would need to press the DEL key while the system is performing the initial POST checks.

You will normally have a few seconds to do this, and are looking for the initial screen displayed when the power is turned on.  this may have an ASUS logo on the screen.

To update the BIOS, you may be able to use the ASUS EZ Flash utility from the BIOS, as described here - https://www.asus.com/support/FAQ/1012815/

You can find further details of your motherboard and available downloads here - https://www.asus.com/Motherboards/P5GCMX/HelpDesk/

P5GC-MX 0518 is the latest Bios update for the LGA775 MB and was released 2009/01/20
To get into the BIOS, try <DEL> key (according to manual page 2-11).

To get into the BIOS Update utility, try Alt-F2 (according to manual page 2-3)

Instructions for updating the BIOS are available from ASUS. You may have to register (free) to get here...

If you look around on their support site, you can also download the manual for the motherboard in a number of languages, which should answer additional questions for you.
why do you want to update the bios?
