Wifi Spectrum Analysis

I have a situation where my clients on a wifi network have experience slow responses on their wifi devices from time to time. I have monitored in the recent past using "freeping". I notice very little packet loss, sometimes they is delay response time, over 100ms sometimes. There is microwave which isabout 20 foot away from most frequently used area. It is used intermitently but frequently. There are bluetooth devices which are used intermittently also but not as frequently as the microwave. All APs are more than 10ft away from the bluetooth devices. There are 4 APs on channels 1, 6 and 11. There are some neighbouring wifi networks but the strongest are on other channels. In an effort to get a more physical picture of communication, I got the use of a simple spectrum analyser. I am not very familiar with reading the device though. Can anyone assist with their thoughts on the screencapture attached. It is the analysis of the site over a period of 60 mins.

That doesn't look like microwave interference.  Microwave ovens usually sit around 2.45GHz.

If the effect is only local to one of your APs, change its channel to 11 and change the AP whose channel is already on 11 to 1 to see if that helps.
