Have you ever successfully, restored a mailbox using VDP ?

nope just trying on test mailbox and I am trying image based restore on old server today. Probably the reason Vmware has not published detailed instruction on application level backup and restore for Exchange. I mostly see SQL backup on their video and examples for Exchange.  Perhaps, it will remain abstract until someone comes up with successful article on Exchange restore which I have found in any forum.

Okay, I would refer you to Tintri's Guide here, which shows

1. how to setup, VDP for Exchange.
2. how to backup and restore...

Yes, it's odd, it's not VMware's document, but that's why VMware, has so many vExperts to write VMware's documentation!

Backup and Recovery Best Practices With vSphere Data Protection Advanced by Tintri

Ignore the Tintri datastore/storage related setup, and skip to VDP... Page 17, gives very detailed instructions.

Also make sure your are restore from application type backup.
