Exchange 2010 Backup

I would like to know the best method to back up Exchange 2010.
I have seen some Administrators backing up the Passive databases. They are called Passive, but the data got written to from the Active database regularly as long as the Active database is also getting data written to.

- I am not sure why Administrators back up the Passive databases, and what will happen during the backup if the the passive database becomes active in the case of the active had problem.?

I also have seen Administrators using Symantec Netbackup GUI, they select DAG for back up, but in the Next window there is an option where they select Passive Databases.

Any best way to back up Exchange databases ?
