Domain to home network

How do I remove three computers (window 7, 2003 MS office pro)) from an exchange server (SBS 2008) domain and set up on a simple and secure home network.  My router is a Netgear WNDR4300

Please assume I am an idiot and need detail instruction.

Right click on Computer, select Properties, then scroll down to "Computer name, domain,and workgroup settings" and click on "Change settings". At the bottom of the next window click on "Change", then under "Member of" select "Workgroup" and then enter your workgroup's name. Reboot. Do that on all the PC's. After that you can shut the DC down.

What about MS Outlook?  Will I loose existing e-mails?
How do I setup the new e-mail accounts?

Export the mailboxes to pst files, and then just setup outlook on the PC's to use those pst's instead of the exchange server.
