MS word 2010: display dropdown list

I have a MS Word 2010 document created by someone else. I managed to unprotect it and edit the fields on the dropdown list.  '

My questions is:  How do I save this document to
1. protect the editing of the fields
2. protect the document itself so as to display the dropdown list

I wear a lot of hats...

"The solutions and answers provided on Experts Exchange have been extremely helpful to me over the last few years. I wear a lot of hats - Developer, Database Administrator, Help Desk, etc., so I know a lot of things but not a lot about one thing. Experts Exchange gives me answers from people who do know a lot about one thing, in a easy to use platform." -Todd S.

You can protect a document via the Protect button on the developer tab. Form Fields can be edited if you choose 'Filling in Forms' as the protection type.

The dropdown list should be visible by default.
