Server 2012 can only boot into recovery.

Hi,

Server 2012 R2 VM running on ESXi 6.0.
I believe a snapshot removal task we did on this server VM has some how corrupted the Windows Server OS.

It now cannot boot up and only ever goes to the recovery screen where it says:
Choose an option: Continue, Troubleshoot, Turn off your PC.

What I have tried:
-Consolidated the VM in ESXi snapshow settings.
-Continue. Reboots to the same screen
-Tried rebooting using safe mode (inc network and command prompt. Reboots to the same screen
-Last known good. Reboots to the same screen
-Went into a command promt and ran dskchk /r. It's says "disk is write protected"
-Went into a command promt and ran sfc /scannow. It runs and says it repaired some errors but reboots to the same screen. (Did this a few times)
-Tried booting into a Server 2012 boot disk but it mainly gave options I've already had in the recovery menu.

Please let me know what else I can try apart from reinstalling Windows Server/
