Default Send Account - Outlook 2011 (Mac)

I have a user who has multiple email accounts in his Outlook 2011 installed on his Mac Pro.

He wants it that when he creates a new email. It is always by default ready to send from the same email account.

I don't seem to be able to do this. It always seems to default to whatever email you have selected. I can understand this for replying, but not for creating new email.

1) Can I confirm if there is a way to always make new emails default to be sent from a particular account?

In addition, this also effects signatures. If he goes to send a new email from the wrong account and then changes it to the account he wants to send from, it keeps the signature of the first account that was selected.

2) Is there a way to make it stop this?

I just added a second account to my Outlook 2011 environment and am able to confirm both of your issues.  

The sending account feature is, as I understand it, a standard feature of most email clients.  I have tried several and most seem to select the currently selected account as the sending account should a new mail message be created at that moment.

The second is a problem and I don't know what to suggest, as Outlook 2011 is now a legacy product with both Office 2016 and Office 365 out for Mac OS X.

I will test my copy of Outlook 2016 to see if the same issues arise.

I just tested Outlook 2016 and it fixes the signature issue.  Now, when the sending account is changed in the "From" field, the signature changes as well.

The initial account selection for new outgoing is still based on the currently selected account in the folder list.  As stated previously, such behavior is standard throughout most of the industry.

To verify, I also tested Apple Mail and it too chooses the sending account based on the currently selected mailbox or folder.

As an aside, Apple Mail (Yosemite) changes the signature correctly when changing accounts.

Recommendation:  Upgrade to Outlook 2016 or use Apple Mail.
