How Can I Link Document Properties to Word Header Fields in SharePoint 2013

I have used WSS for some time... it was set up such that using the NEW DOCUMENT command would load a template and prompt for various properties. SOME of these properties were linked to Header "Fields" in the MS Word template such that the template would have those fields populated by the properties entered into WSS.

Can anyone tell me (or point me to a doc) how to do that?

You can display the contents of both built-in and custom document properties with docProperty fields.

You can insert such a field manually via Insert tab>Text group>Quick Parts>Field... item. Choose the DocProperty field from the left-hand list and select the desired property from the right-hand list.
