Best Way to Read Bible on Device
My parents want to read different versions of the Bible on a device.
-- Must be easy to use / look up versus / navigate
-- Large print capability
-- Big screen / readable font / great resolution
-- I do not want it to need cellular data
-- Want to be able to use Wi-Fi to download Bibles, and be able to read when not connected to Wi-Fi
-- I don't really care about price...but I don't want something too complicated for them
Would a Kindle do the job here? Which one? Or, do I need a Tablet/iPad?

I won't enter into the debate on the best device, but will offer a recommendation on the software to use on any and all devices. YouVersion, available from www.bible.com, has iOS and Android apps (and a number of others such as Palm and Blackberry), plus is also accessible through a web browser. It offers hundreds of downloadable Bible versions for offline use, many with audio capabilities. Their app has been installed over 200 million times, and is completely free. I have no ties to the developer, I am merely a very happy user of their apps on all of my devices.
For simplicity in reading, the Kindle will be your best bet. The font sizes are adjustable. For maximum resolution, get the Voyage, but the Paperwhite is also fine. I'd avoid the plain Kindle, it's a bit budget.

Only downside is the clumsier interface to enter text when searching.

It looks like I do want the simplicity of the Kindle, with a good resolution. However, it seems to me that the latest Kindles are all small -- 6 inches or so. If I want a bigger screen , I need to get an old model. But, the old models probably don't have the advanced resolution, light adjustments capabilities, and so forth! I just don't think 6 inches is big enough for a Bible app Very frustrating. Best Buy and Amazon would love some somethin very frustrating. Best Buy and Amazon would love to sell me something, but I just don't see any good options.

If you would like a large screen and don't need advanced applications, I would recommend the Kobo Arc 10HD 16 GB Tablet.

One point on the search on a Kindle device , it seems to be a bit limited on multi-word searches. In testing on my Paperwhite, it searches only for the first word of the phrase. it also seems to skip common conjunction words (of, and, the, etc). This may be very annoying when searching for a bible quote. Adding single or double quote marks made no difference.

In terms of the size, I think it's an advantage. I can get my Paperwhite (plus case) into a jacket pocket, and with 8 font sizes, 7 typefaces, and 3 line-spacing options, that should cover most users.
