Vmware -Report on Resources

I would like to have a report that gives me the Average resources consumed by  VMs , for instance during one day or one week or one Month. it would be also nice if the report gives the existing physical resources.
I mean by Resources : Memory and CPU

The reason I need a report is to plan for an unexpected outage.
for instance if you have clusters of so many VMs,  how would you know how many ESX servers, to put aside just to use in case one or more ESX servers crash

I have heard of enabling Admission control, but this does not tell us whether we have enough resources to support an outage of one or  two or three ESX hosts crash.


**by the way how to configure an ESX host , so that it does not have VMs migrated  to it unless another ESX crashes ?
