That usually is more or less automatic. If an update is available for your device it'll show up as such and you only need to accept it.

Hello, mainrotor,
If you're looking to update only to ios 8 instead of 9, you will need to download the IPSW firmware file, and update from iTunes.

OP may just be looking at iOS v8 to jailbreak, given that very recently (October 2015), the US Government made jailbreaking tablets and smart televisions no longer illegal.
