Folder encryption

We have a client who wants to place sensitive data in a secure location which would require another password to enter (ie encrypted)

I was thinking of using an encrypted container with VeraCrypt.

He works from a remote desktop server (windows server 2012), and my concern with veracrypt is that it mounts the containter to a drive letter which other users may see, and the container has to be a set size, and wont dynamically expand.

Any suggestions?

Any folder or volume encryption will be decrypted while it's mounted. Depending on what operating system his local machine is using you could use Microsoft's Bitlocker. If you need a solution that means the files are encrypted until you actually need to access them you could go with something like a Sharepoint site but that would require some configuration.
