Change My Documents redirect GPO
I inherited a network were the previous admin put EVERYTHING in the Default Domain Policy and Default Domain Controller Policy. Most of it is pretty easy to back out, but I had a concern about the My Documents redirection. If I remove it from the Default Domain Policy and move it into a new policy, will it just move? Or do I need to move it back to the local workstation and then apply the new policy?

Sounds like the general consensus is to set up folder redirection on a new policy, then take it out of Default Domain Policy, On the new policy, don't select the 'Move the contents of XXX to the new location'
Going to try and get access to a workstation today. I'll need to select 'Move the contents....' after all the machines have updated for any new users. I can give that a week or so.

Would I do a similar process when I move to a new server (that's in the planning stage) except to include the 'Move the contents...' tick box back after everyone moves?

Getting what appears to be conflicting information regarding the 'Move the contents...' tick box.
Right now the Folder Redirection policy is in Default Domain Policy and pointed to \\main\users
I created a new policy (have not applied it yet) with the same settings, but without the 'Move the contents....' selected
If I remove the settings from the Default Domain Policy, and then apply the new GPO, the result should be the same since the files are there. Correct?

Looks like everything applied okay. Thanks for helping me get this straightened up.
But removing the redirection from the Default policy and only specifying it in a new policy should result in success. The only time you will have a problem is if it is specified within both policies in which case the default policy would remain the winning policy.
