How should I setup my wifi network on my Airport Extreme?

What are my optimal settings on this router or how can I get the most out of this device?

Here is a list of devices that are regularly connected to the wifi:

Macbook (2)
iPad (2)
iPhone (2)
Apple TV (hard line connected to Airport Extreme)
Desktop PC
Xbox 360
Amazon Kindle

I've heard about 5.0ghz frequency, but don't know much about the benefits of having it turned on.  The network router mode (bridgemode) is off; what is this even about?

My ISP is a 3rd party reseller of Charter internet.  I live in a valley in the middle of nowhere, so the ISP is a tower relay that sends the signal to a dish on my roof which then goes to my 'modem' (I guess) which is plugged directly into the Airport Extreme.  Our speeds max at about 300kbps with 100gb limit per month.  We have a few neighbors around us that use the same ISP.

Any suggestions are appreciated!

@eoinosullivan
Thanks!  That sums up what I wanted to know.
I do not file share much at home but thank you for the additional suggestion.

@Malmensa
What will the wireless survey do for me?
I picked a channel (my ISP told me what channels are available for me aka not in use) for the 2.4 frequency and I turned on 5.0 frequency.  If I'm within a reasonable range of the router I've been connecting to the 5 over the 2.4.  But if I go outside I choose the 2.4.

@strung
I can confirm the modem is not also serving as a wireless router.
There is a WiFi Scanner tool on OSX but it isn't very complex - you can get to Wireless Diagnostics from the Wi-Fi menubar item:
Option+Click on the Wi-Fi menu item in OS X
Choose “Open Wireless Diagnostics”

Otherwise try this program on the App Store
http://wifiscanner.com/wifiscanner.html#
or
https://istumbler.net/

Finally this is a GREAT program .. to allow you to see and map the wifi strength around your home or office or anywhere .. works great on a laptop
