Can someone explain google indexing to me, principally:
If a page has say three keywords on it, does that mean that page has three index entries?
Or is the page indexed once, period.

The latter. The entire page is entered into the index and various algorithms are applied to the content and structure to determine how it comes back based on search terms entered.

Could you explain why I got a moz report on a url back which said there are 2k google indexes when the site only has 10 pages??
