I am using Office for Mac 2011 and 2016 and have found that they both have the huge limitation of not syncing contact groups.
Does anyone know of any good work arounds for this?
Is there a way to easily copy a contact group from exhange over to the local storage on the mac or is the only way to do this a manual process of recreating the groups on the Mac?

Your solution would work however would not keep the groups in sync when others change them on the exchange server. Even so it seems there just isn't a way to sync groups.
To solve my issue I have just setup an RDP App for outlook on a windows server. To the user it just looks like they have windows Outlook 2016 on their Mac.
The user will move over to a windows work laptop soon so there won't be any issues in the future.
Quite a frustrating incompatibility.
