you can also use IIS to create CSR, but as anywhere access provides the feature to create CSR then you should do it with that instead of using IIS thing.

Okay but before doing that Should I remove the old one from "Console root - Personal - Certificates " ?
Dont remove any certificates until you get new certificate, else it will break anywhere access.

Also should i renew my Cert on the same day when the old cert will expire or it doesn't matter when I will do it?
No it doesnt matter, you can renew cert now if you want to avoid any issue at last moment. Or you can start the process before 7 days of expiration.

Hi
I have spoken IT guy who worked in my company before and he said that I cannot use this method as I will break few things on the server he said I have to only renew cert and download it.
So my question is that do i have to generate key in the server or I don't need to do this ?

obviosuly you need to generate new CSR and then provide the CSR to goDaddy to have new certificate. i am not sure old guy what told you. but thats the standard process to renew the certificate.

Okay so If I paid in go daddy already for renew it will not renew the old cert? I will have to generate CSR ?
payment is asked once you place the order, to renew the certificate you need to must have the new CSR else it wont renew

As far as I am aware about SSL things, we have to create the CSR to renew, if GoDaddy is saying than proceed like that.
Check on console there will be option to install the certificate.
