Adding Across Multiple Spreadsheet Files
I have data in a number of different excel spreadsheet files, e.g. 1.xlxs, 2.xlxs etc. Each of these files contains exactly the same structure of information.
If the structure is something like A1 which has a number in it, is it possible to create another spreadsheet which can be used to add the values of the two entirely different spreadsheets together. I know this can be done in the same spreadsheet if you have multiple sheets, but this is a requirement across multiple files.

Yes. You can use the SUMPRODUCT() function to do this. You could do it without this function but you will see a #REF! error unless all of the source files are open. Sum product avoids that problem.

Perfect, works great.
ProfessorJimJam - that also works, just not as quick as the first suggestion. Points still awarded though, thanks.
