hi i got a windows sbs 2011 with 32gb of ram, the store service of exchange and it consumes 29gb and i read in this article: http://kb.bqe.com/questions.php?questionid=648 that you can limit the usage of memory for this service is a % of the total memory like 32% of the total ram or there is a recommended size to limit this:
msExchESEParamCacheSizeMax and msExchESEParamCacheSizeMin
msExchESEParamCacheSizeMax

Exchange is very good on memory management. It will take most of it, then release it as needed by the OS.
I do not recommend limiting exchange unless you have a valid and confirmed reason to do so (vendor support, for example.) And even then, they'll tell how and what they require. SBS is easy to break...best left alone in all other cases.
Hello,
I would agree with the other comments. If its not causing an issue then don't limit it.
Exchange will consume as much as it can in terms of RAM but when it detects another program wanting to use it then it will release it.
