You can extend the scope and it'll be fine.  You can do it "live" and it will not require a reboot or anything.  However, make sure that you actually have 300+ addresses available via TCPIP settings.

I.e. if your network is 192.168.1.0 with 255.255.255.0 then it won't work because your subnetting with only 254 usable addresses on your network.  In that case, up it to 250 as the last address in the scope.  What out that you aren't covering used static IPs though.
IP address ranges are only in increments of 0-255 (1-254 actual leases).

How many people do you have in your environment?  You might just have your leases set for the standard 8 days which is a long time.  Instead you can change it so leases expire after 2 days so the IPs not in use anymore are flushed out.
