Installing Server 2003 R2 virtual Machine
I have a need to install a Windows 2003 R2 server so I can install an instance of SQLServer 2000 to support an old process that is being upgraded,. Is installing Windows 2003 R2 on a Windows 2012 R2 virtual machine going to work, are there any restrictions that may be a problem either hardware or software i suppose.
Why don't you create a new virtual machine for 2003 R2?

sorry what I mean is
Server with Windows 2012 Standard R2 installed already, install Windows 2003 R2 on a virtual machine, then run SQLSVR2000 on that.

I think you'll need to use Legacy Network Adapters as I don't think 2003 R2 supports the Hyper-V Synthetic network adapters.
(I also assume you're using Hyper-V)
