Best carb jet size? 289 Ford

No idea if this site allows car questions so here goes :).

The car is a classic 65 Ford with a 289.
It has dual exhaust and an Edelbrock Performer 289, dual plane manifold and a Holley 4150 carb which were taken off another car.

The jets in the carb were installed for a much larger application and I need to know what size jets should be installed for this kind of application.

Good question and welcome here at EE

The answer is easy to solve with an exhaust emission test, which will indicate whether your fuel air ratio is high, low or correct.
With the exhaust emission test results you can adjust your carb jet size to obtain the best fuel economy or best performance as you wish.

I already know it's running too rich. I'm not looking for best economy, I'm wanting to know what the best jet size to use would be, at least as a better starting point.

The pros usually always know what jet sizes to use based on the intake carb and exhaust. I thought I would try here. Guess I need to post this in a classic car forum where I've done before.
