Does anyone know if it is possible to configure VLC to open media files from a UNC path if specified?

Sure -- it works fine.

For example, the following command will play "MyFavoriteMovie" from a server named "MyMedia":

"C:\Program Files\VideoLAN\VLC\vlc.exe" \\MyMedia\DVDs\MyFavoriteMovie\Video_TS\Video_TS.ifo
