how do I check my incoming and outgoing mail servers in exchange 2007

is my CAS sever incoming server and what is mentioned in account settings in outlook which is my mailbox server name is outgoing?

Your CAS (Client Access Server) is what the client connects to in order to establish a connection to the Mailbox server.

The incoming/outgoing is handled by whichever server is doing your transport.
