how long emails / attachments sit in outlook until they are archived? I am having exchange 2007, where should I check

You can change the archive settings yourself. You can also setup a rule to move emails with attachments to an archive folder.

yes that is fine, where should I look on my exchange console to check when my emails are archived

You would need to go to the mailstore and change the settings there. See below for detailed instructions.
