We are on O365 with an exchange server also have OWA.
How and or where do I find the Outlook exchange or O365 server name?

On new exchange server versions (and Office365 is based on Exchange 2016) the server name is not required any longer to establish connections. If you want to use any client service you point to service names such as:
- outlook.office365.com (For web access, imap, pop)
- smtp.office365.com (For smtp services)
