I am using Cisco UCM 10.5 and would like to assign two 7936 Polycom units to the same extension and to be used simultaneously in a large conference room.

Is this possible with my current system?

They should both be able to be assigned the same extension, no different from any other phones with a shared extension.  Keep in mind that phones with shared extensions do not function as party lines, so if you desire to use both phones at the same time you'll need to conference the second phone in.  I don't currently have access to test this, but if you disable the "Privacy" feature on the line/extension and enable barge on the phones then once the call is established the other phone should be able to "Barge" in on the established call.
