Set IE as the Default Browser and Edge NOT. Do this via Default Program Settings.

You cannot eliminate or uninstall Edge. It is part of Windows 10, used by Windows 10 displays and is totally built in.

a way to do this behind the scenes without the user logged in?

You either have to set it or use a Group Policy to set defaults if you have GPO's in operation. For our small clients, we just set it.

See this Microsoft article below to disable some functions of Edge by GPO

https://technet.microsoft.com/en-us/itpro/microsoft-edge/available-policies

It is used for a lot in Windows 10 and is very deeply embedded
