When the users enter their credentials, are they then able to send and receive emails?

A few things to check.
1. Check that all the Exchange services have started and have not stopped by themselves recently, esp the address book service.
2. Check add-ons that have been added to Outlook profile which may cause additional authentication prompts. You can disable outlook add-ins in Options, Addins.
3., Check date and time on Workstations are sync'd with the date/time for the new AD domain. Must be within 5 mins of PDC's server time.
This is the best money I have ever spent. I cannot not tell you how many times these folks have saved my bacon. I learn so much from the contributors.

I would also check the autodiscover settings on Exchange and test them to ensure they all work fine - seen incorrect configuration causing a crednetial prompt a number of times in the past.
