Any suggestion on how to create a help file for a project.

I have replaced a long time ago the good old help system built only by the developer when she/he had time with a more convenient wiki-based help system to which the user can participate. Check http://emoreau.com/Entries/Articles/2008/02/A-Wiki-based-help-system.aspx
